Oiled the inside of the 357 Pro to do an initial burn-in to clean/season the grill. Cooked some chicken to learn about temperature control. Then, after a couple of minor adjustments to the hood, set the grill up for low and slow and smoked some ribs. Temperature held steady at 225F for 4 hours, never varying more than 10 degrees up or down from target temperature. There was plenty of charcoal left at the end of the cook. Also, the outside temperature was 17F, so the 357 Pro is very efficient for a metal grill. I am very pleased with the initial results.
My initial impression is that I'm diappointed by the quality of the griddle surface. It looks nothing like the griddle pictured on your website. The weld marks on the griddle I recieved are slightly raised and as such the surface is not entirely flat/smooth. I purchased a stainless steel griddle for a different grill and it's surface was flawless. My husband has been saving for a Hasty Bake and he is now rethinking that purchase. I purchased this as a gift for my son-in-law, so I'll wait to see his reaction before deciding if it should be returned.
This griddle is really well made and really does the job. Getting it seasoned now.... looking forward to a lifelong relationship with this griddle.

My wife is all over me for my Hasty Bake tinkering…but the products are so good and the options…depending upon the size of your dinner party, are just short of limitless. Years ago my Dad used to bird hunt with Grant Hastings. I remember the little retail store at 61st and Lewis near Southern Hills. All these years later I now own 5. My griddle is a great addition and lets me do vegetables like I never could before…I say “get one”!
